Fact: food tastes way better when it’s rainbow-hued. Honestly, why eat lifeless-looking animal products when you can eat gorgeous, multi-colored fruits and veggies? You can color your plate with red, green, yellow, orange, purple, blue…!

? HUMMUS PLATTER ? Happy Friday everyone! How are we all doing? My godson, he's 4, always says he wants a platter and you know what today I wanted a platter ? so I made myself a platter and shared with my mom and sister. The star of this platter is obviously the homemade hummus ? so easy to make just a can of chickpeas, salt, garlic powder, cayenne, lemon juice and some water! Easy delicious oil free hummus. Now I can't take credit for all the things on this plate the roasted red peppers and baby potatoes were my moms but I stole them for the pic ? I also thing something like this would be perfect for Easter Sunday it's so easy to put together and I think platters like this always look gorgeous. This dish is rich, creamy, and full of veggies and kale. It’s perfect for cool fall/winter evenings, and more redeeming than takeout. The secret to making awesome Thai curries at home is to add a little bit of coconut sugar, rice vinegar, and tamari, which makes the dish taste much more complex than just curry paste with coconut milk.
