5 Recipes for Your Summer Vegan Picnic

BFF Maresa dreamed up this amazing vegan recipe that re-creates deviled eggs down to the last detail. Bring ’em along on your picnic adventure and EVERYONE will be impressed.

CFC (Cruelty-Free Chicken) Drumsticks
You can have all the flavor of fried chicken without the buckets of cruelty involved. Vegan chef extraordinaire Zacchary Bird created a bird-friendly, KFC-style fried “chicken” using jackfruit, cauliflower, and flavorful spices. It’s so good, it almost broke the internet.

Thick and Creamy Coleslaw
Coleslaw is a traditional picnic addition, and this version by cookbook author Kathy Patalsky has everything you’re after in a good slaw: cabbage, carrots, and a delicious, creamy dressing. Her version uses tahini, apple cider vinegar, silken tofu, spices, tamari, agave and a few other ingredients to make a crunchy, flavorful lunchtime snack.

Fresh Herb Potato Salad
If you’re going for the full summer mealtime experience, potato salad is a must. Thug Kitchen’s take on the tradition skips mayonnaise and uses Dijon mustard, Yukon potatoes, and fresh dill and chives, instead. It’s fresh, it’s healthy, and tastes even better when eaten outdoors.
