6 Vegan Recipes to Celebrate Cinco de Mayo

The annual occasion usually calls for indulging in some seriously delicious Mexican food, and the good news is it’s easier than ever to celebrate in an animal-friendly fashion. Guacamole, after all, is vegan. WIN.

So, to prepare you for Friday’s holiday, here are six ways to celebrate a vegan Cinco de Mayo.

Make this mango-chili lime margarita.
Frozen margaritas are the best margaritas, and this brightly colored mango version by Minimalist Baker is all kinds of delicious. All you need is frozen mangoes, OJ, a couple of other additions — and, of course, tequila, and you’ll be enjoying an icy cold cocktail in no time.

While you can always order guacamole at a restaurant, it’s also super easy to make at home. This recipe claims to be the “Best Damn Guacamole Ever” and we’d be inclined to agree. Pair it with a heaping pile of fresh tortilla chips and chow down.

Hearty eater? Burritos are probably one of your faves. And while Chipotle offers vegan options (those sofritas though!), you can DIY at home without paying a surcharge for guac. Score! This super-satisfying roll-up from Raw Till Whenever claims it’s “Better Than Chipotle” — so you know it’s gotta be good.

Try these piping hot veggie fajitas.
Fresh, sizzling fajitas are maybe the best meal ever. But who needs meat to make them complete? No one. This all-veggie version from It Doesn’t Taste Like Chicken has an array of delicious vegetables, plus tasty spices to create that flavor combo you remember.

Pile toppings onto some nachos.
Nachos are life. Seriously, who doesn’t love tortilla chips topped with guac, cheese, chili, jalapeños, and everything else in the kitchen sink? This vegan version from Serious Eats is seriously impressive. Serve it to your Cinco-loving friends and everyone will head home happy

Don a t-shirt showcasing your favorite fruit.
