Cherry Chocolate Chip Donuts
  • 2cups gluten-free pancake mix
  • 2Tbsp milled chia seeds
  • 2/3cup sugar
  • 1/3cup dried cherriesfinely chopped
  • 1/3cup vegan chocolate chips
  • 1/4tsp sea salt
  • 1tsp baking powder
  • 1/3cup cherry pureefresh or frozen
  • 1/3cup apple sauce
  • 2/3cup sparkling water
  • 1Tbsp vanilla extract
  • Cooking oil spray
  1. Preheat oven to 375 degrees F.
  2. Add all ingredients to a large bowl and mix until well combined. Set in refrigerator for 15 minutes.
  3. Spray donut pan with an even layer of oil. Use a 1/3 measuring cup to portion batter into cavities. Bake for 25-30 minutes.
  4. Remove from oven and allow to cool for 15-20 minutes. Top with melted chocolate and dried cherries. Allow to cool for chocolate to set and serve.
