  • 1 1/2cups quinoa
  • 3cups vegetable broth
  • 1large stalk celerydiced
  • 2 medium carrotsshredded or finely diced
  • 1 small yellow oniondiced
  • 2tsp dried parsley
  • 1/4cup dried cranberries
  • 1/4cup shelled salted pumpkin seeds
  • 1/2rsp sea salt
  1. Rinse quinoa thoroughly prior to cooking to remove residue.
  2. Add all ingredients to a sauce pan and bring to a boil over medium high heat.
  3. Reduce heat to medium low and cover with a lid. Cook for about 20 minutes.
  4. Remove from heat and allow to set for about 10 minutes. Fluff with a fork and serve.
