1vegan chicken pattygrilled and chopped (or Carnitas)

Instructions
Heat a large cast iron frying pan to medium-high heat. Add the oil and spread it around the bottom of the pan with a spatula.
Spread queso on one tortilla and place it in the pan. Sprinkle on remaining ingredients.
Cover for about 2 minutes, then fold tortilla in half. Flip and let cook on each side for an additional 30 seconds. Remove, slice, and serve with salsa and guacamole.
