Vegan Meatloaf

Ingredients
  

  • 1 pound vegetarian ground beef (try Beyond Meat Tofurky, or Lightlife)
  • ½ cup soft bread crumbs
  • ¼ cup dairy-free milk
  • 1 small onion minced
  • 3 cloves garlic minced
  • ¼ cup ketchup or tomato paste
  • 1 tablespoon soy sauce or Bragg Liquid Aminos
  • 1 tablespoon mustard
  • 1 teaspoon horseradish
  • 1 teaspoon salt

Glaze

  • ¼ cup ketchup or tomato paste
  • 1 tablespoon mustard
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon molasses

Instructions
 

  • Preheat oven to 350°F.
  • Combine all of the meatloaf ingredients in a large bowl and mix thoroughly. Line a bread loaf pan with parchment paper and press the loaf ingredients into it.
  • Whisk together the glaze ingredients and spread evenly across the top of the loaf.
  • Cover pan with foil and bake for 50 minutes. Uncover and bake for another 10 minutes.

    1. I wondered the same, I put all the ingredients, not realizing some was for the glaze and my loaf was very runny, had to scoop out instead of slice. I’ll do things different next time around.

  1. Since the two sets of ingredients still have not been separated by the website, I will add this. The last four ingredients on the list are for the glaze. At least that’s what I assumed, and it worked out perfectly!

    I have not bothered to try any other vegan meatloaf recipes. I think this one is delicious!

    1. Loved this! I used Beyond Beef and added green bell pepper, I didn’t make the glaze, but instead topped it with Sweet Earth Benevolent Bacon. Reminded me of the meatloaf my mom used to make!

  2. The whole house smelled spectacular with this recipe. It was a total hit! I didn’t have any soy sauce so I substituted in Worcestershire sauce. It worked really well.
