The custard-like texture of this Red Velvet Chia Pudding is complemented perfectly with tart and tender raspberries. With close to 15 grams of plant-based protein per serving, this dish is a satiating way to start the day.
Red Velvet Chia Pudding
- 1/4 cup chia seeds
- 1 1/4 cups almond milk
- 1 packet PlantFusion Red Velvet Cake Complete Protein
- 1 cup raspberries fresh or frozen
- Add chia seeds, almond milk and protein powder to a mixing bowl and whisk until well combined. Cover and allow to set in the refrigerator for at least 1 hour and as long as overnight.
- To make the parfait, layer about ½ cup of chia pudding into a dish and evenly top with about ¼ cup of berries. Repeat so that the parfait has 2 layers of chia pudding and 2 layers of raspberries. Makes 2 servings.
