Vegan Sweet Corn Pudding

Ingredients
  

  • ¼ cup vegetable oil
  • ¼ cup masa harina
  • cup sugar
  • 2 cups frozen corn thawed
  • ½ cup cornmeal
  • ½ cup water
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ cup coconut or soy milk

Instructions
 

  • Preheat oven to 350°F.
  • In a medium bowl mix oil, masa, and sugar.
  • Blend half of the thawed corn with cornmeal and water until smooth; fold into masa mixture.
  • Add remaining corn, baking powder, salt, and dairy-free milk. Pour into a greased baking dish.
  • Bake until edges are golden, about 30 minutes.

    1. Some of my fav southern side dishes (and salads) could sub for a healthy desssert, but folks will look at you funny for sure if you call ’em dessert! Sweet potato casserole, broccoli salad, mandarin orange cottage cheese “salad” just to name a few. Add some shredded parmesan to this corn pudding to elevate it above “sweet” corn.

  1. Great recipe! Of the vegan corn pudding recipes I’ve tried, this is by far the closest in flavor and texture to my Grandma’s recipe. I substituted vegan yogurt for the vegetable oil and reduced the sugar, both of which worked well. I’ll definitely make this again.

  2. Prepared today for xmas dinner. Amazing. I added about half stock of vegan butter in small cubes throughout finished mixture. And added two cups vegan graded cheese inside and on top. It was amazing.

    1. What do you think would work as a substitute for the oil? Have family that has to eat oil free. Do you think applesauce would work or should I just add some broth?

  4. This is a great recipe! I also experimented a bit with it by adding vanilla and a pinch of nutmeg. I also use a can of whole corn (liquid included) instead of frozen corn and water. IT REALLY IS A MOIST DELIGHT. GREAT WIYH CHILI!
